  • 2 tbsp lemon juice
  • 2 tbsp cornstarch mixed with 2 tbsp water
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • ½ cup white chocolate, melted and cooled
  • 23 tbsp milk
  • Fresh raspberries
  • White chocolate curls or shavings
  • Mint leaves

Instructions

  1. Preheat oven to 350°F (175°C) and grease/flour three 8-inch round pans.
  2. In a bowl, whisk flour, baking powder, and salt.
  3. Cream softened butter and sugar until fluffy.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla and melted white chocolate.
  5. Gradually mix in dry ingredients alternately with milk until just combined.
  6. Divide batter into prepared pans and bake for 25–30 minutes until golden brown.
  7. For raspberry filling, cook raspberries with sugar and lemon juice; thicken with cornstarch slurry.
  8. For frosting, beat butter and gradually add powdered sugar; mix in cooled melted white chocolate and enough milk for desired consistency.
  9. Assemble by layering cake with frosting and raspberry filling; frost entire cake.
  10. Decorate with fresh raspberries and white chocolate curls.
