Ingredients

  • Oil (or water for oil-free)
  • Optional vegan beef or portobello mushrooms
  • Onion
  • Carrots
  • Celery
  • Garlic
  • All-purpose flour (or cornstarch)
  • Rutabaga (or turnips)
  • Potatoes
  • Green cabbage
  • Vegetable stock
  • Soy sauce (or tamari)
  • Fresh herbs: thyme and rosemary

Instructions

  1. In a large pot, heat oil over high heat. Sear vegan beef or mushrooms until golden brown; set aside.
  2. Reduce heat to medium and add onion, carrots, celery, and garlic; cook until softened.
  3. Stir in flour and cook for 1–2 minutes to thicken.
  4. Gradually add vegetable stock along with rutabaga, potatoes, cabbage, soy sauce, salt, pepper, sugar, and herbs; stir well.
  5. Bring to a boil then simmer uncovered for 45–50 minutes until potatoes are tender.
  6. Return seared vegan beef or mushrooms to pot before serving.
