  • 2 tablespoons oil (or water for oil-free)
  • 1 large onion, diced
  • 3 large carrots, cut into chunky pieces
  • 2 ribs celery, diced
  • 5 cloves garlic, minced
  • 1 medium rutabaga/swede, cut into chunky pieces
  • 4 large potatoes, cut into chunks
  • ¼ head green cabbage, shredded
  • 4 cups vegetable stock
  • ¼ cup soy sauce (or Tamari)
  • OPTIONAL vegan beef or portobello mushrooms

Instructions

  1. In a large pot over high heat, add oil. Once hot, sear optional vegan beef or portobello mushrooms until golden brown; set aside.
  2. Reduce heat to medium and sauté onions, carrots, and celery in the same pot until softened. Add garlic and cook briefly.
  3. Sprinkle in flour and stir to coat vegetables.
  4. Slowly pour in vegetable stock while stirring to avoid lumps.
  5. Add rutabaga, potatoes, cabbage, soy sauce, salt, pepper, sugar, and herbs; stir well.
  6. Bring to a boil then reduce heat to simmer uncovered for 45-50 minutes.
  7. Stir in seared protein before serving; enjoy with vegan dumplings or bread.
