  • ½ cup cocoa powder
  • 1½ tsp baking powder

  • ½ cup whole milk, room temperature
  • 2 large eggs, room temperature
  • ½ cup sour cream, room temperature
  • ½ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 tsp espresso powder
  • 1 cup hot water
  • 4 large egg yolks
  • 2 tbsp granulated sugar
  • 2 tbsp cornstarch
  • 2 cups heavy cream, divided
  • 3.5 oz dark chocolate, finely chopped
  • 4.5 oz white chocolate, finely chopped
  • 5 oz milk chocolate, finely chopped

Instructions

  1. Preheat oven to 350°F (180°C). Grease and line two 8-inch round cake pans.
  2. In a mixing bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
  3. In another bowl, whisk eggs, milk, sour cream, oil, and vanilla until smooth. Combine with dry ingredients until just blended.
  4. Dissolve espresso powder in hot water and mix into batter until incorporated. Pour evenly into prepared pans and bake for about 35 minutes.
  5. For the mousses: Whisk egg yolks with sugar and cornstarch; heat heavy cream with vanilla until steaming. Slowly whisk hot cream into yolk mixture and cook until thickened; pour over dark and white chocolates separately to melt.
  6. Whip remaining heavy cream to stiff peaks and fold into each chocolate mixture until smooth.
  7. Layer the cake: Place one layer of chocolate cake on a serving plate; add dark mousse, then white mousse on top. Chill for 30 minutes before adding the second layer of cake.
  8. Prepare ganache by heating heavy cream and pouring it over chopped milk chocolate; stir until smooth and allow to cool slightly before spreading it on the chilled cake.
  9. Decorate as desired with chocolate shavings or fresh berries.
