- 1 tsp espresso powder
- 1 cup hot water
- 4 large egg yolks
- 2 tbsp granulated sugar
- 2 tbsp cornstarch
- 2 cups heavy cream, divided
- 3.5 oz dark chocolate, finely chopped
- 4.5 oz white chocolate, finely chopped
- 5 oz milk chocolate, finely chopped
Instructions
- Preheat oven to 350°F (180°C). Grease and line two 8-inch round cake pans.
- In a mixing bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
- In another bowl, whisk eggs, milk, sour cream, oil, and vanilla until smooth. Combine with dry ingredients until just blended.
- Dissolve espresso powder in hot water and mix into batter until incorporated. Pour evenly into prepared pans and bake for about 35 minutes.
- For the mousses: Whisk egg yolks with sugar and cornstarch; heat heavy cream with vanilla until steaming. Slowly whisk hot cream into yolk mixture and cook until thickened; pour over dark and white chocolates separately to melt.
- Whip remaining heavy cream to stiff peaks and fold into each chocolate mixture until smooth.
- Layer the cake: Place one layer of chocolate cake on a serving plate; add dark mousse, then white mousse on top. Chill for 30 minutes before adding the second layer of cake.
- Prepare ganache by heating heavy cream and pouring it over chopped milk chocolate; stir until smooth and allow to cool slightly before spreading it on the chilled cake.
