- 1/3 cup brown sugar (packed)
- 1 tablespoon vegetable oil
- 1/2 teaspoon pure vanilla extract
- 1 large egg
- 1/3 cup + 1 tablespoon milk
- 5 cups powdered sugar
- 2 teaspoons vanilla extract
- 1/2 teaspoon cinnamon (optional)
- 3–4 tablespoons heavy whipping cream (cold)
Instructions
- Preheat your oven to 325°F (160°C).
- For the cheesecake layer, beat softened cream cheese and granulated sugar until smooth. Mix in flour, vanilla extract, cinnamon, heavy cream, and eggs until well combined.
- In another bowl, whisk together flour, baking powder, and spices for the spice cake. Beat softened butter with brown sugar until fluffy; add vegetable oil, vanilla extract, and egg. Mix in dry ingredients along with milk.
- Assemble by layering the pumpkin pie in a baking dish followed by half of the cheesecake mixture and half of the spice cake batter. Repeat layers and bake for about an hour or until set.
