  • ¼ cup Tamari (low sodium)
  • 2 Tablespoon Thai sweet red chili sauce
  • Juice of 1 lime
  • 1 teaspoon maple syrup
  • ⅓ cup cashews (chopped)
  • ¼ cup scallions (chopped)
  • ¼ cup cilantro (fresh, chopped)
  • ¼½ cup carrots (shredded)
  • Sesame seeds for topping
  • 1 head butter lettuce (leaves removed)

Instructions

  1. Heat sesame oil in a skillet over medium-high heat and sauté diced onions until golden brown.
  2. Add minced garlic and ginger; cook until fragrant.
  3. Incorporate ground chicken, breaking it apart as it cooks. Season lightly with salt and pepper until no longer pink.
  4. In a bowl, mix tamari, Thai sweet chili sauce, lime juice, and maple syrup. Stir well.
  5. Once chicken is cooked, add chopped cashews and pour in the sauce mixture. Stir to combine and let heat through for 2 minutes.
