  • 1 medium yellow or white onion, diced
  • 2 pounds ground beef or turkey
  • 2 tablespoons diced garlic
  • 1 tablespoon Italian seasoning blend
  • 2 teaspoons chili powder
  • 1 tablespoon smoked paprika
  • 1 1/2 teaspoons ground cumin seeds
  • 1 tablespoon brown sugar
  • 1 tablespoon vinegar
  • 2 (14 ounce) cans crushed tomatoes
  • 2 (15 ounce) cans red kidney beans, drained
  • 1/8 teaspoon black pepper
  • 2 teaspoons kosher salt
  • 1/4 cup jalapeños, sliced and seeded
  • 1/8 teaspoon crushed red pepper flakes
  • 2 tablespoons masa harina

Instructions

  1. Heat 3 tablespoons of canola oil in a large pot over medium heat. Add one diced onion and sauté until soft, about 3-5 minutes. Stir in 2 tablespoons of minced garlic and 2 pounds of ground beef or turkey, cooking until browned.
  2. Reduce heat to medium-low and add 1 tablespoon of Italian seasoning, 2 teaspoons of chili powder, 1 tablespoon of smoked paprika, 1 ½ teaspoons of ground cumin, 1 tablespoon of brown sugar, 1 tablespoon of vinegar, 2 cans (14 ounces) crushed tomatoes, 2 cans (15 ounces) drained kidney beans, ¼ cup sliced jalapeños, and season with salt and black pepper. Mix well.
  3. Allow the chili to simmer for about 10 minutes before adding 2 tablespoons of masa harina for thickening. Continue cooking for another 10 minutes to meld flavors.
  4. Serve hot with your choice of toppings like sour cream or shredded cheese.
