- 2.5 pounds beef chuck (cut into cubes)

- 3 jalapeno peppers (chopped)

- 2 cups beef stock
- 2 tablespoons olive oil
- 2 tablespoons masa harina (optional for thickening)
Instructions

- Blend softened peppers with some soaking water until smooth.
- Season cubed beef with cumin, salt, and pepper.

- Sauté chopped onions and jalapeños in the same pot until tender.
- Add minced garlic and cook until fragrant.
- Return seared beef to the pot along with the chili paste; cook for another few minutes.
- Stir in beef stock, water, brown sugar, and masa harina if desired; bring to a boil.
- Reduce heat and simmer for about two hours until beef is tender.
