  • 1/4 red onion (diced)
  • 1/2 red bell pepper (seeded and diced)
  • 3 green onions (sliced)
  • 1/4 cup cilantro (minced)
  • 2 cups rotisserie chicken (chopped)
  • 15.25 oz can sweet corn (drained)
  • 1/2 cup plain Greek yogurt (2% or higher for creaminess)
  • 1/3 cup mayonnaise
  • Juice and zest of 1 lime
  • 1 clove garlic (finely minced or grated)
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/4 tsp each salt and freshly cracked pepper

Instructions

  1. Prepare the cucumbers by laying slices on paper towels to absorb moisture.
  2. In a bowl, whisk together Greek yogurt, mayonnaise, garlic, lime juice and zest, along with the seasonings until smooth.
