  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper to taste
  • 4 ears of corn, husks and silk removed
  • 2 tbsp butter, melted
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup crumbled cotija cheese
  • 1/4 cup chopped cilantro
  • 1 lime, juiced
  • 1/4 tsp chili powder (optional, for extra heat)
  • 1 cup long-grain white rice
  • 2 cups water
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 avocado, diced
  • Hot sauce, to taste (optional)
  • Lime wedges, for serving

Instructions

  1. In a medium bowl, combine the cubed chicken breasts with olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper.
  2. Heat a large skillet or cast-iron pan over medium-high heat. Add the seasoned chicken in a single layer.
  3. Cook the chicken for 5-7 minutes per side until it's cooked through and golden-brown (the internal temperature should reach 165°F). Once done, remove from the pan and set aside.
  4. Cook corn by grilling, boiling, or roasting as preferred.
  5. Let the corn cool slightly before cutting off the kernels.
  6. In a large bowl, combine corn kernels with mayonnaise, sour cream, cotija cheese, cilantro, lime juice, and chili powder (if using).
  7. Rinse your rice under cold water until clear. In another saucepan, combine rinsed rice with water, olive oil, and salt. Bring to a boil.
  8. Cover tightly and reduce heat low; simmer without lifting the lid for 18-20 minutes.
  9. Start with a generous base of cooked rice in each bowl. Layer on seasoned chicken first; next comes the street corn mixture followed by black beans. Top each bowl with diced avocado.
  10. Drizzle hot sauce if desired and garnish with lime wedges right before serving.
