- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp smoked paprika
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- Salt and pepper to taste
- 4 ears of corn, husks and silk removed
- 2 tbsp butter, melted
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup crumbled cotija cheese
- 1/4 cup chopped cilantro
- 1 lime, juiced
- 1/4 tsp chili powder (optional, for extra heat)
- 1 cup long-grain white rice
- 2 cups water
- 1 tbsp olive oil
- 1/2 tsp salt
- 1 can (15 ounces) black beans, rinsed and drained
- 1 avocado, diced
- Hot sauce, to taste (optional)
- Lime wedges, for serving
Instructions
- In a medium bowl, combine the cubed chicken breasts with olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper.
- Heat a large skillet or cast-iron pan over medium-high heat. Add the seasoned chicken in a single layer.
- Cook the chicken for 5-7 minutes per side until it's cooked through and golden-brown (the internal temperature should reach 165°F). Once done, remove from the pan and set aside.
- Cook corn by grilling, boiling, or roasting as preferred.
- Let the corn cool slightly before cutting off the kernels.
- In a large bowl, combine corn kernels with mayonnaise, sour cream, cotija cheese, cilantro, lime juice, and chili powder (if using).
- Rinse your rice under cold water until clear. In another saucepan, combine rinsed rice with water, olive oil, and salt. Bring to a boil.
- Cover tightly and reduce heat low; simmer without lifting the lid for 18-20 minutes.
- Start with a generous base of cooked rice in each bowl. Layer on seasoned chicken first; next comes the street corn mixture followed by black beans. Top each bowl with diced avocado.
- Drizzle hot sauce if desired and garnish with lime wedges right before serving.
