Ingredients

Scale
  • 1 lb chicken breast or thighs
  • 3 tablespoons maple syrup
  • 2 tablespoons sriracha
  • 1 tablespoon soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

  • 1 cup coconut milk
  • 1 cup water
  • Pinch of salt
  • Fresh cilantro, chopped (optional)
  • Lime wedges (optional)
  • Toasted coconut flakes (optional)
  • Sliced green onions (optional)

Instructions

  1. Prepare the Coconut Rice: Rinse jasmine rice until clear. Combine with coconut milk, water, and salt in a saucepan, bring to a boil, then simmer covered for 15 minutes. Let sit off heat for 5 minutes before fluffing.
  2. Cook the Chicken: Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper; sauté for 6–8 minutes until golden brown.
  3. Make the Sauce: Whisk together maple syrup, sriracha, soy sauce, garlic, and ginger in a small bowl. Pour over cooked chicken and stir to coat. Cook for an additional 2–3 minutes until the sauce thickens.
  4. Serve: Spoon coconut rice onto plates and top with spicy maple chicken. Garnish as desired with cilantro, lime wedges, toasted coconut flakes, or green onions.
