- 1 green onion (ends trimmed and finely sliced)

- 1 ½ tbsp rice vinegar or white apple vinegar
- 1 tsp sesame oil
- 1 tbsp honey or maple syrup
- 2 large garlic cloves (minced)

Instructions
- Wash and dry the cucumbers. Cut off both ends and slice diagonally at a 45° angle for thin spirals. Then cut each spiraled cucumber in half and place in a mixing bowl.
- In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, minced garlic, and chili flakes until well combined. Adjust flavors to taste.
