  • 4 large organic sweet potatoes
  • 23 tablespoons extra virgin olive oil
  • 1/2 cup almond milk
  • 1/3 cup organic brown sugar
  • 1/4 cup pure maple syrup
  • 1 cup organic raisins
  • 2 cups vegan marshmallows
  • 1 1/2 cups raw pecans

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel and cube sweet potatoes; boil in salted water until fork-tender (15-20 minutes) and drain.
  3. In a bowl, mash sweet potatoes with olive oil, almond milk, vanilla extract, brown sugar, cinnamon, and nutmeg until smooth.
  4. Fold in raisins and half of the pecans; pour into a greased baking dish.
  5. In another bowl, mix remaining pecans with vegan marshmallows, maple syrup, cinnamon, nutmeg, and allspice; sprinkle on top of sweet potato mixture.
  6. Bake for 60-75 minutes until bubbly and golden brown.
