  • 1 pound large shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 3 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • Cooked rice or noodles for serving

Instructions

  1. Rinse shrimp under cold water and pat dry. Season with salt and pepper.
  2. Prepare vegetables: trim asparagus, slice red bell pepper, rinse snap peas, and mince garlic and ginger.
  3. In a bowl, whisk together soy sauce, cornstarch, and water until smooth.
  4. Heat oil in a skillet over medium-high heat. Add garlic and ginger; stir-fry until fragrant.
  5. Add shrimp to the skillet; cook until pink (about 2-3 minutes). Remove from pan.
  6. In the same pan, stir-fry asparagus and red bell pepper for about 2-3 minutes until crisp-tender.
  7. Add snap peas; stir-fry another 2 minutes.
  8. Return shrimp to the skillet along with the sauce mixture; cook until sauce thickens (about 1 minute).
  9. Serve over rice or noodles, garnished with sesame seeds or green onions if desired.
