- 2 tablespoons olive oil
- 1 small yellow onion, finely diced
- 10 oz cremini mushrooms, sliced
- 8 oz cream cheese
- 3/4 cup Parmesan cheese, grated
- 1/2 cup Gruyère cheese, grated
- Fresh thyme leaves, salt and black pepper to taste
- 2 large eggs, divided
Instructions

- In a skillet over medium heat, melt butter and olive oil. Add diced onion and sauté until translucent.
- Stir in minced garlic and sliced mushrooms; cook until browned.
