Ingredients

Scale
  • 1 pound chicken sausage (or turkey sausage)
  • 5 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 21/4 cups mirepoix (diced carrots, celery, and onion)
  • 4 cups baby gold potatoes (chopped)
  • 4 cups chicken stock
  • 6 tablespoons flour
  • 3 cups milk (1%, 2%, or whole)
  • 2 cups shredded extra-sharp Cheddar cheese

Instructions

  1. In a large pot over medium-high heat, cook the chicken sausage until browned. Remove from pot but leave some grease.
  2. Sauté mirepoix in the same pot until softened; add minced garlic.
  3. Stir in chopped potatoes, seasonings, and chicken stock. Bring to a boil; then simmer covered until potatoes are fork-tender.
  4. In another pot, melt butter and whisk in flour. Gradually add milk while whisking until thickened; mix in heavy cream.
  5. Combine the creamy mixture with the potato mixture, adding shredded cheese gradually until melted.
  6. Serve warm with optional hearty bread.
