  • 2 cups cherries (washed, pitted, and halved)
  • 1 1/3 cup granulated sugar
  • 2 large eggs
  • 5 tablespoons unsalted butter (melted)
  • 1/3 cup canola or vegetable oil
  • 3/4 cup all-purpose flour
  • 3/4 cup Dutch process cocoa powder
  • 1 tablespoon cornstarch
  • 1 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 400°F. Spread halved cherries on a parchment-lined baking sheet, sprinkle with sugar, and roast for about 10 minutes until soft.
  2. Lower the oven temperature to 325°F. Prepare an 8×8 inch baking pan by spraying it with non-stick spray and lining it with parchment paper.
  3. In a bowl, sift together flour, cocoa powder, cornstarch, and salt.
  4. In another bowl, whisk together sugar, eggs, melted butter, oil, and vanilla until fluffy.
