  • 1/2 tsp salt (for muffins)
  • 1 tbsp pumpkin pie spice
  • 1/2 cup melted unsalted butter
  • 1 1/4 cups granulated white sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup canned pumpkin puree
  • 3/4 cup buttermilk

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. For the streusel topping, mix cold butter, brown sugar, flour, and salt in a bowl until crumbly.
  3. In a separate bowl, whisk together flour, baking soda, salt, and pumpkin pie spice.
  4. In another bowl, blend melted butter with granulated sugar; add eggs one at a time, mixing well after each addition. Stir in vanilla and pumpkin puree until smooth.
  5. Combine wet ingredients with dry ingredients gently; fold in buttermilk until just combined.
