  • 1 1/2 cups rolled oats
  • 1 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a 9×13-inch baking dish.
  2. In a large bowl, mix flour, oats, brown sugar, baking soda, and salt. Add melted butter and stir until combined.
  3. Press two-thirds of the mixture into the prepared dish to create the base.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, eggs, pumpkin pie spice, and vanilla until smooth.
  5. Pour the pumpkin filling over the base layer evenly.
  6. Sprinkle remaining crumble mixture on top and add nuts if desired.
  7. Bake for 30-35 minutes until golden brown and set.
  8. Allow to cool completely before slicing into squares.
