  • 1 small yellow onion, diced
  • 1 cup sliced carrots
  • 1 cup sliced celery
  • 6 cloves garlic, minced
  • 3 tablespoons flour
  • 4 cups chicken broth
  • 2 cups shredded rotisserie chicken
  • 2 cups heavy cream
  • 16.3 oz refrigerated biscuit dough

Instructions

  1. Melt butter in a large pot over medium-high heat. Add onion, carrots, and celery; sauté for about 8 minutes until softened.
  2. Toss biscuit dough pieces in flour and set aside.
  3. Add minced garlic, Italian seasoning, sage leaves, thyme (if using), salt, and pepper. Cook for an additional minute.
  4. Stir in flour and cook for another minute to thicken the base.
  5. Pour in chicken broth to deglaze the pot; add shredded chicken, heavy cream, frozen peas, and bay leaves.
  6. Bring to a simmer over medium-high heat.
  7. Gently place biscuit pieces on top of the soup without submerging them. Cover and reduce heat to low; simmer for about 15 minutes until dumplings are cooked through.
