  • 8 oz spaghetti
  • 1 tbsp olive oil
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp smoked paprika
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 1/4 cup chopped fresh parsley
  • 1 tbsp butter
  • 1/2 cup chicken broth
  • 1/4 tsp crushed red pepper flakes (optional)

Instructions

  1. Cook spaghetti according to package instructions; drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Season chicken with salt, pepper, and smoked paprika; cook for 6–7 minutes on each side until fully cooked. Remove and slice.
  3. In the same skillet, melt butter and sauté onions and garlic for 2–3 minutes until softened.
  4. Add chicken broth and simmer. Stir in heavy cream; cook for an additional 2 minutes.
  5. Reduce heat to low; add Monterey Jack and Parmesan cheeses until melted.
  6. Combine spaghetti with the sauce in the skillet, tossing to coat.
  7. Top with sliced chicken and garnish with parsley before serving.
