- ½ cup kalamata olives, pitted
- ⅓ cup crumbled feta cheese (omit for dairy-free)
- ¼ cup fresh parsley or dill, chopped
- 1 cup plain Greek yogurt or coconut yogurt
- ½ cucumber, grated and excess water squeezed out
- 1 tablespoon fresh dill, chopped
- Salt and pepper, to taste
- 3 tablespoons olive oil for lemon vinaigrette
- 2 tablespoons fresh lemon juice for lemon vinaigrette
- 1 teaspoon honey (omit for strict keto or Whole30)
- 1 small clove garlic, minced for lemon vinaigrette
- ½ teaspoon dried oregano for lemon vinaigrette
- Salt and pepper, to taste for lemon vinaigrette
Instructions
- Marinate the steak by whisking together olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper. Add the steak and refrigerate for at least 30 minutes.
- Grill the marinated steak over medium-high heat for 4–5 minutes per side until medium rare. Let rest before slicing.
- Prepare tzatziki by mixing Greek yogurt (or coconut yogurt), grated cucumber, lemon juice, garlic, dill, salt, and pepper in a bowl. Chill.
- Assemble the bowls with your grain base topped with sliced steak, cherry tomatoes, cucumber cubes, red onion slices, olives, feta (if using), and herbs.
