  • 2 cans chickpeas (15 oz each), drained and rinsed
  • 1 English cucumber, diced
  • 1 pint cherry tomatoes, halved
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • ½ red onion, finely diced
  • ¾ cup kalamata olives, pitted and halved
  • ¾ cup crumbled feta cheese (or dairy-free feta)
  • Fresh parsley and mint leaves

Instructions

  1. Prepare the chickpeas by draining and rinsing them under cold water; pat dry.
  2. Dice the cucumber, bell peppers, and red onion into bite-sized pieces. Halve the cherry tomatoes and olives.
  3. Chop fresh parsley and mint leaves finely.
  4. In a small bowl, whisk together lemon juice, minced garlic, Dijon mustard, honey (or maple syrup), oregano, cumin, salt, and pepper while slowly drizzling in olive oil.
  5. Combine chickpeas, vegetables, olives, and herbs in a large bowl. Pour dressing over and toss gently to coat.
