Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • ½ cucumber, diced
  • ¼ red onion, thinly sliced
  • ½ cup feta cheese, crumbled
  • ½ cup tzatziki sauce
  • Fresh parsley, for garnish

Instructions

  1. Marinate the chicken by mixing olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper in a bowl. Add chicken and coat thoroughly. Let marinate for at least 30 minutes.
  2. Heat a skillet over medium heat and cook the marinated chicken for 5–6 minutes on each side until golden brown and cooked through. Allow to rest before slicing.
  3. Assemble bowls by placing cooked rice or quinoa at the bottom. Top with sliced chicken, cherry tomatoes, cucumber, red onion, and feta cheese.
  4. Drizzle with tzatziki sauce and garnish with fresh parsley.
