- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 cup cooked rice or quinoa
- 1 cup cherry tomatoes, halved
- ½ cucumber, diced
- ¼ red onion, thinly sliced
- ½ cup feta cheese, crumbled
- ½ cup tzatziki sauce
- Fresh parsley, for garnish
Instructions
- Marinate the chicken by mixing olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper in a bowl. Add chicken and coat thoroughly. Let marinate for at least 30 minutes.
- Heat a skillet over medium heat and cook the marinated chicken for 5–6 minutes on each side until golden brown and cooked through. Allow to rest before slicing.
- Assemble bowls by placing cooked rice or quinoa at the bottom. Top with sliced chicken, cherry tomatoes, cucumber, red onion, and feta cheese.
- Drizzle with tzatziki sauce and garnish with fresh parsley.
