  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • ½ cucumber, diced
  • ¼ red onion, thinly sliced
  • ½ cup feta cheese, crumbled
  • ½ cup tzatziki sauce
  • Fresh parsley, for garnish

Instructions

  1. In a bowl, whisk together the olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and black pepper. Add chicken breasts to the marinade and let sit for at least 30 minutes.
  2. Heat a skillet over medium heat. Cook chicken for about 5–6 minutes per side until golden brown and fully cooked. Allow to rest before slicing.
  3. Divide cooked rice or quinoa into bowls. Top with sliced chicken, cherry tomatoes, cucumber, red onion, and crumbled feta.
  4. Drizzle with tzatziki sauce and sprinkle with fresh parsley before serving.
