- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup melted coconut oil
- 1 cup freshly squeezed lemon juice
- 1 cup granulated sugar
- 1/4 cup cornstarch

- 1/4 teaspoon turmeric
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking pan.
- In a mixing bowl, combine rolled oats, all-purpose flour, brown sugar, melted coconut oil, and salt until crumbly.
- Press two-thirds of the mixture firmly into the bottom of the prepared pan.
- In another bowl, whisk together lemon juice, granulated sugar, cornstarch, turmeric, and vanilla extract until smooth. Pour over the crust.
- Sprinkle the remaining crumble mixture over the lemon filling evenly.
- Bake for about 38 minutes or until golden brown on top.
- Allow to cool completely before cutting into squares.
