  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup melted coconut oil
  • 1 cup freshly squeezed lemon juice
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1/4 teaspoon turmeric
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. In a mixing bowl, combine rolled oats, all-purpose flour, brown sugar, melted coconut oil, and salt until crumbly.
  3. Press two-thirds of the mixture firmly into the bottom of the prepared pan.
  4. In another bowl, whisk together lemon juice, granulated sugar, cornstarch, turmeric, and vanilla extract until smooth. Pour over the crust.
  5. Sprinkle the remaining crumble mixture over the lemon filling evenly.
  6. Bake for about 38 minutes or until golden brown on top.
  7. Allow to cool completely before cutting into squares.
