- ½ cup unsalted butter, cold and cubed
- 1 egg yolk
- 1½ cups whole milk
- ¾ cup granulated sugar
- 3 large egg yolks
- ¼ cup cornstarch
- Zest and juice of 2 lemons
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix flour, sugar, and salt. Cut in cold butter until crumbly. Add egg yolk and cold water; mix until dough forms.
- Press the dough into a tart pan and chill for 20–30 minutes.
- Prick the crust with a fork and bake for 12–15 minutes until golden; cool slightly.
- For the filling, whisk together sugar, cornstarch, lemon zest, and egg yolks in a saucepan over medium heat. Gradually add milk while whisking continuously until thickened (about 5–7 minutes). Remove from heat; stir in lemon juice, butter, and vanilla until smooth.
- Pour filling into the crust and bake for another 25–30 minutes until set but slightly jiggly in the center. Let cool completely before slicing.
