- 1/3 cup fresh lemon juice
- 1 tablespoon lemon zest

- Preheat your oven to 350°F (175°C). In a bowl, mix together 1½ cups flour, ½ cup sugar, baking powder, melted butter, and salt until crumbly. Reserve ½ cup of this mixture for the topping.
- Press the remaining mixture into the bottom of an 8×8-inch baking pan lined with parchment paper. Bake for about 12-15 minutes until lightly golden.
- In a separate bowl, whisk together eggs, sugar, remaining flour, lemon juice, and lemon zest until smooth.
- Pour the lemon mixture over the baked crust and sprinkle with reserved crumb mixture on top. Bake for another 20-25 minutes until set.
