  • 2 tablespoons olive oil
  • 1 ¼ lbs. boneless skinless chicken breast
  • lemon pepper seasoning
  • 1 teaspoon EACH: dried oregano, basil, parsley, mustard powder
  • ½ teaspoon dried dill weed
  • ½ cup dry white grape juice
  • 2 tablespoons butter
  • 1 small yellow onion (diced)
  • ¾ cup carrots (diced)
  • 2 sticks celery (diced)
  • 4 cloves garlic
  • 6 cups chicken broth
  • 1 teaspoon hot sauce
  • 1 teaspoon Worcestershire sauce
  • ½ cup heavy cream
  • 2 cups fresh spinach
  • ½ cup parmesan cheese (freshly grated)
  • Juice of 1 lemon (34 Tbsp.)
  • ¾ cup orzo (uncooked)

Instructions

  1. Heat olive oil in a large pot and sear seasoned chicken until golden brown. Remove and set aside.
  2. In the same pot, deglaze with grape juice and add butter, diced onions, carrots, celery, and garlic; sauté until softened.
  3. Stir in dried herbs and seasonings before adding chicken broth. Bring to a boil then reduce to a simmer.
  4. Return the chicken to the pot and cook until fully cooked through.
  5. Boil orzo separately then drain.
  6. Stir in heavy cream and parmesan cheese into the soup. Add spinach until wilted.
  7. Finish with freshly squeezed lemon juice and serve over orzo.
