  • 1 box (15.25 oz) yellow cake mix
  • 1 box (3.4 oz) instant lemon pudding mix
  • 4 large eggs
  • 1/2 cup vegetable oil
  • 1 cup water
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 2 cups powdered sugar
  • 23 tbsp fresh lemon juice (for glaze)
  • Optional: 1 tbsp milk (for softer glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish or line with parchment paper.
  2. In a large bowl, combine the yellow cake mix, lemon pudding mix, eggs, vegetable oil, water, lemon juice, and lemon zest. Beat until smooth.
  3. Pour the batter into the prepared pan and bake for 30-35 minutes or until a toothpick comes out clean.
  4. For the glaze, whisk together powdered sugar and fresh lemon juice (and milk if using) until smooth.
  5. Once the cake is baked and still warm, poke holes on top and pour the glaze over it.
