  • 2 lbs apples (Gala or Fuji)
  • 10 cups water
  • 2 Tbsp brown sugar
  • 4 inches ginger
  • 2 cinnamon sticks
  • 2 tsp black peppercorns

Instructions

  1. Wash and quarter the apples, removing the cores but keeping the skins on.
  2. In an Instant Pot, combine apples, sliced ginger, brown sugar, cinnamon sticks, black peppercorns, and water. Cook on high pressure for 18 minutes. Alternatively, simmer all ingredients in a stock pot for about 30 minutes until apples are soft.
  3. Strain the tea through a fine mesh sieve into a pitcher, pressing gently on the apples to extract their juices.
  4. Allow to cool before storing in jars or pitchers.
  5. Serve hot or chill and enjoy cold.
