- 3 pounds boneless, skinless chicken thighs
- 1 cup orange juice
- 2 tablespoons orange marmalade
- 1/2 cup white sugar
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 large bell pepper, chopped
- 1/2 small onion, chopped
- 1–2 tablespoons avocado oil

- Cut chicken thighs into bite-sized pieces and season with salt and pepper.
- Preheat your Blackstone griddle over medium-high heat and add avocado oil.
- Cook the seasoned chicken until browned and cooked through, about 7-10 minutes.
- Add chopped bell pepper and onion; sauté until tender, around 3-4 minutes.
- In a bowl, whisk together orange juice, marmalade, sugar, soy sauce, rice vinegar, ginger, garlic, and red pepper flakes. Pour over chicken and veggies.
