  • 3 pounds beef stew meat (or lamb)
  • 1/4 cup all-purpose flour
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons fresh rosemary
  • 1 teaspoon dried thyme
  • 4 cups beef broth
  • 5 carrots (peeled and cut into chunks)
  • 1 cup frozen peas
  • 2 bay leaves

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat. Sear the beef stew meat coated in flour, salt, pepper, garlic powder, onion powder, rosemary, and thyme until browned on all sides.
  2. Slowly add the beef broth while stirring to deglaze the pan. Bring to a boil.
  3. Add carrots and bay leaves; reduce heat to medium-low, cover, and simmer for about 45 minutes, stirring occasionally.
  4. In the last five minutes of cooking, stir in frozen peas. Remove bay leaves before serving.
