  • Lime zest from 1 lime
  • 1 tsp chili powder
  • 1 tsp brown sugar
  • 3/4 tsp salt
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 14 ½ tsp chipotle chili powder (optional)
  • 1/4 tsp pepper
  • 2 medium avocados, chopped
  • 1 cup cherry tomatoes, quartered
  • Fresh corn from 1 ear sweet corn
  • 1/3 cup finely chopped red onion
  • 1/2 red bell pepper, chopped
  • 1 jalapeno pepper, diced
  • 2 tablespoons finely chopped cilantro
  • 1 garlic clove, minced
  • 2 tablespoons lime juice for salsa
  • 1/4 tsp ground cumin for salsa
  • 1/4 tsp salt for salsa
  • 1/8 tsp pepper for salsa

Instructions

  1. Marinate the chicken by mixing olive oil, lime juice, lime zest, and spices in a bowl. Let it sit for at least 30 minutes.
  2. While the chicken marinates, prepare the avocado salsa by combining chopped avocados with tomatoes, corn, onion, bell pepper, jalapeno, cilantro, garlic (or powder), lime juice, cumin, salt, and pepper.
  3. Heat a grill pan over medium-high heat. Cook marinated chicken for about 5-7 minutes per side until fully cooked (internal temperature of 165°F).
  4. Slice the chicken and serve topped with avocado salsa.
