  • 1/2 teaspoon EACH ground cumin, smoked paprika, onion powder, garlic powder
  • 1/4 teaspoon pepper
  • 14 1/2 teaspoon chipotle chili powder (optional for more heat)
  • 2 medium avocados, chopped
  • 1 cup cherry tomatoes, quartered
  • Fresh corn from 1 ear sweet corn
  • 1/3 cup finely chopped red onion
  • 1/2 red bell pepper, chopped
  • 1 jalapeno pepper, diced
  • 2 tablespoons finely chopped cilantro
  • 1 garlic clove, minced
  • 1/4 teaspoon EACH ground cumin, salt
  • 1/8 teaspoon pepper

Instructions

  1. In a bowl, mix olive oil, lime juice, lime zest, and spices to create the marinade.
  2. Marinate the chicken in the mixture for at least 30 minutes (or longer for more flavor).
  3. Heat a skillet over medium-high heat and cook the marinated chicken for about 5 minutes on each side until cooked through.
  4. While the chicken cooks, prepare avocado salsa by combining avocados, tomatoes, corn, onion, bell pepper, jalapeño, cilantro, garlic, lime juice, and spices in a bowl.
