  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 2 tablespoons peach puree (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream together butter, sugar, and honey until light and fluffy.
  4. Beat in eggs one at a time, then mix in vanilla extract.
  5. Gradually add the dry ingredients and milk alternately until just combined.
  6. Fold in diced peaches gently.
  7. Divide batter among cupcake liners up to two-thirds full.
  8. Bake for 18-22 minutes or until a toothpick comes out clean.
  9. Let cool completely on a wire rack before frosting.
  10. In another bowl, beat together softened cream cheese and butter until smooth.
  11. Mix in honey and vanilla extract, then gradually add powdered sugar while beating until fluffy.
  12. Optionally mix in peach puree for extra flavor.
