- 1 medium spaghetti squash
- 1 tbsp olive oil
- ½ cup diced onion
- 2 cloves garlic (minced)
- ½ cup plain Greek yogurt
- 1½ cups shredded sharp cheddar cheese (divided)
- ¼ tsp salt
- ¼ tsp black pepper
- Optional: ¼ tsp paprika or dried thyme
Instructions
- Preheat the oven to 400°F (205°C).
- Slice the spaghetti squash in half lengthwise, scoop out seeds, brush cut sides with olive oil, and roast face-down on a baking sheet for 35–40 minutes.
- In a skillet over medium heat, sauté diced onions in olive oil until softened (about 5 minutes). Add minced garlic and cook for another minute.
- Shred the roasted squash into noodle-like strands using a fork.
- In a bowl, combine shredded squash with sautéed onions and garlic, Greek yogurt, 1 cup of cheddar cheese, salt, pepper, and optional spices.
- Transfer mixture to a greased casserole dish and top with remaining cheese.
- Bake at 375°F (190°C) for 20–25 minutes until bubbly and golden brown.
- Allow to cool slightly before serving.
