  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract

  • 1/4 cup chocolate chips
  • 1 cup chocolate chips for topping
  • 1 tsp coconut oil for topping
  • Flaky sea salt, optional

Instructions

  1. In a bowl, mix almond flour, cashew butter, maple syrup, melted coconut oil, vanilla extract, and salt until evenly combined.
  2. Place parchment paper on a cutting board. Transfer the mixture onto it and press down firmly to create a 1/2-inch thick layer.
  3. In a small bowl, combine chocolate chips and coconut oil; microwave in 30-second intervals until melted and smooth.
  4. Pour the melted chocolate over the cookie dough base and sprinkle with flaky sea salt if desired.
  5. Chill in the freezer for about 10 minutes until set, then cut into chunks to enjoy!
