- 2.5 lbs yellow or Yukon gold potatoes
- 2 cups chicken broth (or vegetable broth)
- ½ cup olive oil
- ½ cup lemon juice
- 5 cloves garlic (minced)

- 1 tbsp salt
Instructions
- Preheat your oven to 400°F.
- Peel and cut potatoes into thick wedges or cubes.
