- 1 large bulb of garlic
- 1.3kg / 2.8lb baking potatoes
- 5 tbsp / 75g butter (2 tbsp/30g melted, the rest at room temperature)
- 2 tbsp heavy cream (at room temperature)
- 60g / 3/4 cup freshly grated parmesan cheese (plus more to serve)
- 4 large egg yolks
- Finely diced fresh parsley (for garnish)
- Olive oil (as needed)
- Salt and pepper (to taste)
Instructions
- Preheat the oven to 180C/356F.
- Roast the garlic by slicing off the tip, drizzling with olive oil, wrapping in foil, and baking for 50-60 minutes until soft.
- Peel and dice the baking potatoes, add them to a pot with cold salted water, bring to a boil, and cook until fork-tender. Drain well.
- In the same pot, mash the drained potatoes with butter, heavy cream, roasted garlic, and parmesan until smooth. Season generously with salt and pepper, then mix in egg yolks one at a time.
- Transfer the mixture to a piping bag fitted with a star tip and pipe swirled shapes onto a lined baking tray.
- Drizzle melted butter over the tops and bake at 200C/400F for 15-20 minutes until golden brown.
- Garnish with fresh parsley and extra parmesan before serving.
