- 300 g cavatappi macaroni
- 5 onions (thinly sliced)
- 1/2 cup beef broth
- 3 cups heavy cream
- 1 cup grated Parmesan cheese
- 1/2 baguette (for topping)
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp pepper
- 2 tsp oregano
- 1 tbsp flour + 3 tbsp water (for béchamel)
- 1 tsp sugar
- Fresh parsley (chopped)
- 1 tbsp garlic powder
- 1 tbsp smoked paprika powder
- 1/2 tsp nutmeg
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, add olive oil and sauté thinly sliced onions for 30–40 minutes until caramelized. Stir occasionally and deglaze with beef broth if necessary.
- In the same skillet, melt butter and whisk in flour, then gradually add heavy cream to create béchamel sauce.
- Mix in two-thirds of the caramelized onions, salt, pepper, parsley, and Parmesan cheese into the béchamel.
- Cook cavatappi macaroni in salted boiling water until just under al dente; drain and combine with the sauce.
- Transfer to a baking dish, top with remaining caramelized onions and breadcrumbs from the baguette.
- Bake uncovered for 10–15 minutes until golden brown.
- Serve hot and enjoy!
