  • 300 g cavatappi macaroni
  • 5 onions (thinly sliced)
  • 1/2 cup beef broth
  • 3 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 baguette (for topping)
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tsp oregano
  • 1 tbsp flour + 3 tbsp water (for béchamel)
  • 1 tsp sugar
  • Fresh parsley (chopped)
  • 1 tbsp garlic powder
  • 1 tbsp smoked paprika powder
  • 1/2 tsp nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, add olive oil and sauté thinly sliced onions for 30–40 minutes until caramelized. Stir occasionally and deglaze with beef broth if necessary.
  3. In the same skillet, melt butter and whisk in flour, then gradually add heavy cream to create béchamel sauce.
  4. Mix in two-thirds of the caramelized onions, salt, pepper, parsley, and Parmesan cheese into the béchamel.
  5. Cook cavatappi macaroni in salted boiling water until just under al dente; drain and combine with the sauce.
  6. Transfer to a baking dish, top with remaining caramelized onions and breadcrumbs from the baguette.
  7. Bake uncovered for 10–15 minutes until golden brown.
  8. Serve hot and enjoy!
