  • 4 large Yukon Gold potatoes
  • 1 cup shredded Gruyère cheese (or your favorite)
  • ½ cup Parmesan cheese
  • 1 cup heavy cream or whole milk
  • ½ cup beef broth (or vegetable broth)
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon dried thyme (or 1 teaspoon fresh thyme)
  • 1 tablespoon butter (for greasing)
  • Fresh thyme sprigs for garnish
  • Extra Parmesan cheese for garnish
  • Crispy fried onions (optional, for extra crunch)

Instructions

  1. Sauté the sliced onions in butter and olive oil until caramelized (20-30 minutes). Stir in garlic powder, thyme, and broth.
  2. Layer half of the potato slices in a greased baking dish, followed by half of the onion mixture and half of the cheeses. Repeat layers.
  3. Mix cream with salt, pepper, and thyme; pour over layers.
  4. Cover with foil and bake at 375°F (190°C) for 45 minutes. Remove foil for the last 15 minutes to brown the cheese.
