  • 32 ounces frozen cubed hash browns (thawed)
  • 2 cups shredded sharp cheddar cheese
  • 1 ½ cups sour cream
  • 1 small yellow onion (diced)
  • 2 large yellow onions (thinly sliced)
  • ¼ cup unsalted butter (melted)
  • ½ cup chicken broth
  • Salt
  • Black pepper
  • Cayenne pepper
  • All-purpose flour
  • ½ cup whole milk
  • Vegetable oil for frying

Instructions

  1. Preheat your oven to 350°F. Spray a 9×13-inch baking dish with nonstick spray.
  2. In a skillet over medium heat, melt butter and sauté diced onion and minced garlic until translucent.
  3. In a large bowl, mix thawed hash browns, sautéed onions, cheddar cheese, sour cream, flour, salt, black pepper, cayenne pepper, chicken broth, and milk until well combined.
  4. Pour the mixture into the prepared baking dish. Top with thinly sliced onions and sprinkle with salt.
  5. Heat vegetable oil in a pan and fry the onion slices until golden brown and crispy. Drain on paper towels before adding them on top of the casserole.
  6. Bake for about 50 minutes or until bubbly and golden brown on top.
