Ingredients

  • 1 (14-16 pound) whole turkey
  • Salt & pepper (to taste)
  • 1 cup unsalted butter (softened)
  • 1 tablespoon fresh sage (chopped)
  • 1 tablespoon fresh thyme (chopped)
  • 1 tablespoon fresh rosemary (chopped)
  • 4 cloves garlic (minced)
  • 1 lemon (halved)

Instructions

  1. Prepare the turkey by taking it out of the fridge an hour before roasting.
  2. In a bowl, mix softened butter with sage, thyme, rosemary, garlic, salt, and pepper.
  3. Preheat oven to 450°F; move one rack to the bottom third.
  4. Remove giblets from the turkey cavity and pat dry with paper towels.
  5. Season inside and out with salt and pepper; stuff cavity with lemon halves and herbs.
  6. Rub herb butter all over the turkey.
  7. Place turkey breast-side up on a rack in a roasting pan; reduce oven temperature to 350°F.
  8. Roast for about three hours or until an instant-read thermometer reads at least 165°F in the thigh.
  9. Let rest for 20 minutes before carving.
