- 8 oz. dry rotini pasta
- 9 oz. hard turkey slices, chopped
- 6.5 oz. turkey pepperoni, chopped
- 1 cup canned artichoke hearts, drained & quartered
- 2 cups cherry tomatoes, halved
- 1 cup olives, pitted & halved
- ½ cup pepperoncini, sliced
- 8 oz. mozzarella pearls
- ½ cup olive oil
- ¼ cup red apple vinegar
- 2 garlic cloves, minced
- 1 Tbsp Italian seasoning
- ¼ tsp red pepper flakes
- Salt & black pepper, to taste
Instructions
- Cook the rotini pasta according to package directions until al dente. Drain and cool completely.
- In a small bowl or jar, whisk together olive oil, red apple vinegar, minced garlic, Italian seasoning, red pepper flakes, salt, and pepper.
- Prepare the salad ingredients: chop turkey slices and pepperoni into bite-sized pieces; halve cherry tomatoes; slice olives and red onion; thinly slice basil.
- In a large bowl, combine cooled pasta with turkey slices, pepperoni, artichokes, tomatoes, olives, pepperoncini, mozzarella pearls, onion, and basil. Pour dressing over the top and toss until well coated.
- Chill in the refrigerator for at least 30 minutes before serving.
