Description

  • 8 oz. dry rotini pasta
  • 9 oz. hard turkey slices, chopped
  • 6.5 oz. turkey pepperoni, chopped
  • 1 cup canned artichoke hearts, drained & quartered
  • 2 cups cherry tomatoes, halved
  • 1 cup olives, pitted & halved
  • ½ cup pepperoncini, sliced
  • 8 oz. mozzarella pearls
  • ½ cup olive oil
  • ¼ cup red apple vinegar
  • 2 garlic cloves, minced
  • 1 Tbsp Italian seasoning
  • ¼ tsp red pepper flakes
  • Salt & black pepper, to taste

Instructions

  1. Cook the rotini pasta according to package directions until al dente. Drain and cool completely.
  2. In a small bowl or jar, whisk together olive oil, red apple vinegar, minced garlic, Italian seasoning, red pepper flakes, salt, and pepper.
  3. Prepare the salad ingredients: chop turkey slices and pepperoni into bite-sized pieces; halve cherry tomatoes; slice olives and red onion; thinly slice basil.
  4. In a large bowl, combine cooled pasta with turkey slices, pepperoni, artichokes, tomatoes, olives, pepperoncini, mozzarella pearls, onion, and basil. Pour dressing over the top and toss until well coated.
  5. Chill in the refrigerator for at least 30 minutes before serving.
