  • 4 boneless skinless chicken breasts
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • ½ tsp dried oregano
  • ½ tsp dried thyme
  • ¼ tsp red pepper flakes (optional)
  • ½ cup chopped sun-dried tomatoes (in oil, drained)
  • 2 tbsp butter
  • Salt and pepper, to taste
  • Fresh basil or parsley, for garnish

Instructions

  1. Season both sides of chicken breasts with salt and pepper.
  2. In a bowl, whisk together chicken broth, heavy cream, Parmesan cheese, minced garlic, oregano, thyme, and optional red pepper flakes.
  3. Place seasoned chicken in the crockpot and pour sauce over it. Add sun-dried tomatoes on top.
  4. Cook on LOW for 4 hours or HIGH for 2 hours until chicken is tender.
  5. In the last 30 minutes of cooking, add butter to enrich the sauce. Stir before serving.
  6. Garnish with fresh basil or parsley and serve with rice, pasta, or bread.
