- 1 lb carrots, peeled and cut into thick rounds
- 1 tbsp olive oil
- 2 tbsp grated Parmesan cheese
- 1/2 tsp garlic powder
- 1/4 tsp smoked paprika
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 425°F (220°C).
- Boil carrot rounds in salted water for 10–12 minutes until fork-tender.
- Drain and let cool slightly, then smash each round on a baking sheet using the bottom of a glass.
- Drizzle with olive oil, season with garlic powder, smoked paprika, salt, pepper, and sprinkle with Parmesan cheese.
- Roast for 20–25 minutes until edges are golden and crispy, flipping halfway through.
- Garnish with freshly chopped parsley before serving hot.
