  • 2 lbs potatoes, thinly sliced
  • 1/4 cup balsamic vinegar
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, whisk together balsamic vinegar, olive oil, minced garlic, chopped thyme, salt, and pepper.
  3. Layer half of the potato slices in a greased round baking dish. Drizzle half of the balsamic mixture over the first layer.
  4. Add the remaining potato slices and drizzle with the rest of the balsamic mixture.
  5. Cover with foil and bake for 45 minutes; then uncover and bake for another 15-20 minutes until crispy and golden.
  6. Allow to cool slightly before slicing and serving.
