  • 2 tablespoons unsalted butter
  • 2 cloves garlic (minced)
  • 1 cup heavy cream (or whole milk/half and half)
  • 1/2 cup Parmesan cheese (optional)
  • 1 teaspoon fresh thyme
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a ceramic baking dish.
  2. Thinly slice the Yukon gold potatoes using a mandolin or sharp knife.
  3. In a large pot over medium heat, melt the butter and sauté the minced garlic until fragrant. Stir in flour to create a roux.
  4. Gradually add the heavy cream while stirring until thickened, about 5 minutes.
  5. Mix in Parmesan cheese (if using), thyme, salt, and pepper until smooth.
