- 1 tablespoon olive oil
- 1 tablespoon Italian seasoning
- 1 teaspoon paprika
- 1 large sweet potato (peeled and cubed)
- 5 cloves garlic (minced)
- 1/4 teaspoon red pepper flakes
- 1 tablespoon tomato paste
- 6 cups water
- 8 oz cheese tortellini (refrigerated)
- 4 oz fresh spinach
- 1/2 cup heavy cream
- 4 tablespoons fresh thyme
Instructions
- Heat olive oil in a large pot over medium heat. Add crumbled sausage and cook until browned.
- Drain excess grease, then stir in Italian seasoning, paprika, sweet potato, garlic, red pepper flakes, and tomato paste.
- Pour in water and bring to a boil, stirring to dissolve the tomato paste.
- Reduce heat to simmer, cover, and cook for about 15 minutes until sweet potatoes are tender.
- Add tortellini to the pot and cook according to package instructions (about 10 minutes).
- Stir in spinach until wilted and remove from heat. Add heavy cream and mix well.
- Taste for seasoning before serving. Garnish with fresh thyme.
